    1. Roast the Gram Flour

    • Heat a thick bottomed pan on low flame. Add the besan and roast for 5-7 minutes, stirring often. The color will turn slightly darker with a nutty smell. This step adds depth of flavor.
    • Allow the roasted gram flour to cool completely before the next step.
    1. Melt the Ghee

    • In another pan, melt the ghee on low heat.
    • You can use 1 cup of ghee or reduce it to 3/4 cup if you prefer. The more ghee, the richer the mohanthal.

    • To the melted ghee, add the roasted besan. With a spoon, stir continuously to avoid any lumps for 2-3 minutes.

    • Grease a plate with some ghee and transfer the mohanthal mixture into it. Spread evenly into a circular disc shape with a spoon or spatula.

    • Allow it to completely set for at least 2 hours before cutting.
